Simple Whole Wheat Sourdough Biscuits

I think I have mentioned before that I am a lazy biscuit baker. Love biscuits but hate the mess of rolling and cutting the dough. So you can imagine my delight when I came across this biscuit recipe. Measure, stir, shape, rise and bake.....

Simple Whole Wheat Sourdough Biscuits.

I am still learning to bake with 100% whole wheat flour. The recipe was easy to adapt, for a half batch.

Sourdough Biscuits
adapted from:  The Bread Winners Cookbook
400-degree oven

1 c sourdough starter - room temperature
1 T honey

1 c sifted whole wheat flour OR use pastry grind flour
1 1/2 t baking powder
1/2 t salt

2 T butter

Stir the honey into the starter. Combine the dry ingredients in a large bowl, add the starter and honey mixture. Mix well, the dough will be firm.


Coat a small skillet with the butter.


Pinch off pieces of the biscuit dough, shape into a basic biscuit shape, place in the skillet.


Let rise in a warm place 15-20 minutes.  Bake 15-20 minutes or until done in your oven. Makes 6-8 biscuits.

Serve with butter and honey or jam.

  1. This is a new one. I don't believe I have ever had sour dough biscuits. And I'm pretty sure I've never had sour dough whole wheat. Combine it all and it sounds marvelous!

  4. Ours were fluffy, but a dense fluffy I think due to the whole wheat flour. They do take a bit of a rising time before baking. I had leftover biscuits with butter and jam for lunch, they were quite good. I think sifting the flour will help with lightening up the texture. Thanks so much for sharing your experience!
