A week before Christmas and we are packing up books, and belongings. Yes, there are wrapped gifts on a bookshelf, and yes there are plans for a wonderful Christmas day with family. But the packing must go on...........In addition to packing up belongings, we are eating down our food supplies, because why pack it up. It is much easier to eat what we have and shop later for more than to pack it up and have to (say it isn't so!) eat out.
|Scrambled Eggs with Smoked Salmon Sour Cream and Capers|
Please don't get me wrong, nothing is better than a wonderful planned meal out, but eating out as a way of life is usually fast food. Fast food is not my meal of choice, while it has been a meal of necessity and may be again. For now; in order to not have to pack up our food, we are enjoying some creative and delicious dishes, and this is one of them.
One good enough to share here.
Scrambled Eggs with Smoked Salmon, Sour Cream, Capers and Pickled Onions
by the seat to my pants
1 T butter
2 T cream or milk
salt and pepper to taste
1/2 c smoked salmon chunks
pickled onions (we keep these on had all the time, they are the best!)
Scramble eggs and cream together, stir in smoked salmon. Melt butter in skillet, over medium heat, when melted add eggs mixture, season with salt and pepper. Cook until soft set or to your liking.
Serve with a spoon of sour cream and a sprinkling of capers and pickled onions.
Serve with hash browned potatoes and toast if desired.
