Broiled Plums with Sour Cream and Honey

We have been on the prowl for property to settle into for retirement, which has come for one of us, and the other of us (that would be me!) can negotiate in a couple of years. And now after being consistently frugal and level headed, we decided that while we will get what we want, we will do it the old fashion way, our way, the frugal way.

We have dreamed up about every scenario imaginable, some of which included:

Selling our current home in a thriving real estate market and walking in with cash to make a purchase, flat out! Yeah well that didn't happen, so on to plan number two.....

Waiting until actual retirement for me. Yeah but the market where we want to live is coming out of a deep slow-down and now is the time for us to buy, as prices are rising and will continue, yikes! So on to plan three......

Taking an equity loan, finding a solid yet (very) needy fixer and just going for it! So we did. After thinking about where to retire we thought of staying in this area and living on a floating home, but that does not really work well for the entire lifestyle we hope to enjoy. We thought about a couple of smaller places and bouncing between the two, but again that does not work well for our intended  lifestyle.

After much anguish, we took a day off (sort of, we were still dreaming about property on the water somewhere....) and hit the beach on the Washington peninsula and just like being struck by lightening, or in my case brought to sobbing tears, I knew immediately where I needed to go. Back home to the beach were I lived as a child.

This lake is a 5 minute walk from the house, east side.

This ocean is a 7 minute walk from the house, west side.

And this weekend we made an offer on that very needy fixer I mentioned earlier, and now we are at the mercy of the sellers.......but those pictures above? That's right the beach and the lake,well that little fixer has deeded access to those places.....

I don't wait well, but this morning I did make breakfast. This is a process more than a recipe, and a delicious way to use up fruit that is still deliciously healthy, but possibly a bit wrinkled. This also makes a great after dinner dessert.....

Broiled Plums with Sour Cream and Honey

Broiled Fruit with Sour Cream and Honey
by the seat of my pants

Fruit, peel or pit as needed - We used black plums
sugar - 1 to 2 teaspoons, to get the crusty goodness going under the broiler
Sour Cream or Yogurt
Honey, Jam or Cinnamon - or all three after all it is your breakfast!









All food when you are camping, should
be this good!



















Wash fruit, remove pits or peel depending on what type
of fruit you are using.
Sprinkle lightly with sugar, you can
use brown or regular.
Broil until lightly browned.
Top with Sour Cream, Yogurt, Honey or Jam in any combination you desire.
Add a bit of cinnamon if you like.

Warning, the sour cream will run off quickly, but these plums are delicious. I can't wait to try other fruit.

Hmmm, where have we been?


Today we are having rain, and we need it. The above photo is not our yard, it is the tenant's garden where I work.

We have been busy with the busy work associated with buying one home and trying to sell another, and we will return as soon as is possible, I promise!

If we are lucky it will be with photos of our next home. If that takes a bit longer, it will be with some delicious fall food.

Canning Tomatoes From the Garden

Canning Tomatoes from the Garden.

Canning tomatoes is not as straight forward as when I was a kid, ohhhhh so many years ago. One reason is that newer tomato types are not as high in natural acid. This can be remedied by adding acid to the jar, putting you back to where you want things to be, for water bath canning.

But, I have a glass top stove and the traditional water bath canner with the circular groves in the bottom, does not work well on a glass top stove. I also have a pressure canner and while I know that you don't have to can tomatoes in a pressure canner, there is no rule you cannot.....

So today we canned tomatoes in the pressure canner. This is a real act of faith on my part. My own dear mother was scared to death of a pressure canner. She owned them, she never used them. I have used them so little myself, that I decided it was time enough to get comfortable and let go of the old thoughts about pressure cooker and canners. You know the urban myth about them just blowing up for no reason what so ever.....


Keep in mind this is a process more than a recipe, because exact measurements are hard to come by when processing produce from your own garden. Also don't be intimidated about canning, folks have been canning and eating what they can for decades. It is a skill, yes. But not one that cannot be learned, and it will provide your family with wonderful foods to enjoy and a great deal of pride for that special one that does the canning!

Canned tomatoes

ripe tomatoes
5% white vinegar
sea salt
boiling water
pint canning jars, rings and dome lids


Wash tomatoes, remove the stem and dice (you may slip the peel* if you desire, I left it on).

Carefully spoon into jars, packing lightly.


To the top of each jar with 1 T white vinegar and 1 t sea salt.

Add boiling water to cover. leaving 1/2 inch head space.

Wipe top of jar, attach dome and ring. Screwing on firmly but not tight.



Add jars to the Pressure canner, secure lid and bring pressure up to 11 pounds. Process for 10 full minutes. Remove canner (do not open) from flame and let pressure drop naturally. When pressure has dropped, open and remove jars.


Verify that jars are sealed. Wipe with a damp cloth, remove ring and label the dome lid for contents in the jar and date of processing.

* to slip the peel, drop whole tomatoes into boiling water, let stand one minute, drain and slip the peel right off the tomato.

Apple Butter Grilling Sauce with Two Hicks Livin in CIN seasoning blend

I am still playing around with jars of jam. It turns out that my jam (and fruit butters) making was in fact more than our jam eating capacity, last year. Being the frugal woman that I am, I just know that not only is nothing going to waste, but something great if often times the end result of being creative in the kitchen.

No one had more fun in a kitchen!

We grill year round and one of my favorite ways to receive help preparing dinner is to have someone take the grill while I get things done in the kitchen. The end result is a wonderful dinner, shared tasks and no one is responsible for dinner on their own. This is especially helpful week nights, because I am tired when the work day ends.

I will have a container of meat marinading for a couple of days to sweet the deal. There is nothing better than flavorful grilling going on outside to inspire me to get the sides done and the table set...

Today I am kicking the grilling sauce up a notch by adding in some of this wonderful seasoning blend, Two Hicks Livin in CIN. Earlier this week we made green beans seasoned with this jewel of a seasoning and I can't wait to try this apple butter based grilling sauce made even better with Two Hicks!


Apple Butter Grilling Sauce
by the seat of my pants
makes about 4 1/2 cups

Note:  The tomatoes do not dominate the flavor of this sauce. It is bright without being to sweet or fruity. If a sweet sauce is your choice, add 1/4-1/2 c brown sugar along with the tomatoes.

1 16 oz jar apple butter
1 16 oz can diced tomatoes, do not drain
2 T pickled onion plus 2 T of the brine - you will find recipe for the onions here
4 T Two Hicks Livin in CIN seasoning*

Combine the tomatoes, pickled onions and brine. Bring to a boil. Add the apple butter, stir, cover and remove from heat. When barely warm, add the Two Hicks and puree. Decant and store in the refrigerator.
Tonight we grill...

Use to marinade meat before grilling, and may be used as a seasoning after grilling.

Green Beans seasoned with Two Hicks Livin in CIN

I have a co-worker that I task share with, we co-manage the housekeeping team where we work, in addition to our regular full time jobs. While this might sound like "Oh poor me..." or even bragging, rest assured that it is not. Two people can easily (OK, on most days) share a task and give each other support and still have time to complete the rest of the day and all that must be done.

Ironically we each have a second job after hours also. She and her her husband have a seasoning company specializing in Southern seasonings and rubs. I on the other hand, can, make jam, bake bread and blog......As it turns out, this partnership works out very well, both during business hours and for those at home hours as well.

She gave us a small package of a delicious herb blend called Two Hicks Livin in CIN, and it is delicious. The easiest way to enjoy a new seasoning is on a food that you eat on a regular rotation. And this blend shines! Of course you may use more, we went light this first time out, but will use more in the future. And I have more great ideas and recipe development in mind for this blend...

Two Hicks Livin in CIN Green Beans
serves 4-6

1 pound of cooked green beans, drained well
1 T butter
1 T brown sugar (don't leave out, the brown sugar brings out the cinnamon)
1-2 T Two Hicks Livin in CIN Blend


Toss everything together in the pan used to cook the green beans, cover with a lid and let rest 1 minute.

Serve and prepare for compliments!
