I can now say that the end is in sight! We are set to close on the house on the peninsula by the end of February. While this road has been long and a bit twisted with disappointments, we have found the perfect home for retirement!
Celery Root Carrot and Apple Slaw |
The only thing left to do besides the actual physical move is to get back to cooking.....
I am starting with this salad because it is delicious, and more vegetables at the table is always a good thing. I have become interested in eating more salads, especially non-lettuce salads. I also like a slaw type salad, but currently, I do not eat uncooked cabbage. This wonderful salad is the answer to both. Terry and I made this salad together, our cooking together is always a fun time.
Celery Root Carrot and Apple Slaw
adapted from: simply recipes
serves 4-6
1 medium celery root (the size of a BIG grapefruit)
1 large apple - peeled if desired, we do not peel
2-3 carrots - peeled
1/2 c mayonnaise
1 T real maple syrup
1 T dijon mustard
1 T fresh lemon juice
OR
1 T Quick-Pickled Onion Vinegar
2 T fresh chopped parsley - if available - make with and without parsley, it is always delicious!
Peel and shred celery root, apple, and carrots.
Combine dressing ingredients, whisking until smooth. Fold everything together.
Let sit while putting dinner on the table, and then,
Enjoy!
Update, I took the leftover slaw for my lunch with some crumbled feta over the top. Salty feta is delicious with the lightly sweet flavor and mild crunch of the vegetables. I will definitely make this again!

ReplyDeleteWe love a basic tossed salad, but I know what you mean about exploring non-lettuce options. This sounds refreshing and a good compliment to a simple meat or fish.
