We are about to use up the last of the store bought dressing. Which is a celebration really to our homemade life. We are a bit out of the way to just "drop by the store" and make a quick "grab and go" of a few things. Which I love, by the way. We moved here on purpose, for the quiet, for the nature and for the good life we had in mind. Which includes healthy food, to fuel our selves and our creativity.
|Carrot Ginger Dressing|
This dressing while made famous and served over iceberg, will be drizzled over romaine lettuce with diced cucumber and slivers of sweet red pepper. Simple, beautiful and delicious. We loved it, it is so good.......
Ginger Carrot Dressing
adapted from: Saveur
makes about 1 1/2 cups
3/4 c oil
1/2 c rice wine vinegar
1/4 c soy sauce
2 T sugar
1 1/2 - 2 t finely grated fresh ginger (use the full 2 teaspoons, yum!)
2 carrots, peeled and chopped
1 - 1/2 inch slice of onion, if you really like onion use the entire 1/2 yellow onion as suggested in the recipe. If however you want a hint of onion use a single slice, chopped.
pepper to taste
Combine in a food processor or blender, blend until smooth. Spoon over salad greens of choice.
