Avocado Caprese Salad

When I look back on the last few recipes, I might be stuck in a pattern. One where everything is arranged in a circle on a dinner plate. But to be honest a dinner plate is a perfect platter for a table of two. Fortunately, my lack of creative arrangement does not take away from the delicious taste of this salad, I promise.

Tonight we enjoyed a delicious Avocado Caprese Salad. This is a bit off the path from the usual Caprese salad, but very much a delight. And because it is a freestyle salad, feel free to improvise, to please your family.

Avocado Caprese Salad
by the seat of my pants
serves 2-4

1 large avocado
2 plum tomatoes, each tomato needs to yield 4 slices with, with butt and stem ends diced
8 slices fresh mozzarella cheese
fresh basil leaves, we happen to have purple basil growing right now
salt and pepper, don't skip this, the avocado needs a bit of salt and pepper and so do the tomato slices
1-2 balsamic vinegar, plus more to offer at the table

Slice avocado in 8 slices and arrange on a platter.
Place a slice of mozzarella near or under each slice of avocado.
Arrange a slice of tomato near or under the avocado and or cheese.

Season with salt and pepper.

Combine the diced tomato pieces with 1-2 T balsamic vinegar, spoon over the plate drizzling the vinegar evenly over the top of all ingredients.




Arrange 8 whole leaves of basil in the center by each slice of avocado. Mince remaining basil and sprinkle evenly over the salad.

Pass additional balsamic vinegar to dress each salad serving individually.

clean up is very easy with a salad like this one...

  1. I had to laugh at your "everything's arranged in a circle" comment. But salads and summer dishes seem to lend themselves to this. I have an avocado and some tomatoes in the house ... maybe I need to buy some mozzarella.
