|Creamy Banana and Kiwi Parfaits|
I have put these flavors together before and while they tasted superb, but the photo was horrible! A terrible, no good, horrible food photo is usually the result of a delicious surprise when one is playing around in the kitchen, and the end result does, in fact, deserve to be shared. If you are a food blogger, well then it stands to reason that some of the blog posts will have delicious food with a terrible photo....
The down side to blogging a recipe with a horrible photo is that not everyone will take the time to read beyond the photo. So in celebration of delicious food with horrible photos everywhere, I will be repeating some of these recipes, only this time I will include a photo showing how delicious the food really is!
Plus I really think you will enjoy this healthy dessert. It is simple to double or triple depending on your guest or family count. Oh, and did I say, it was healthy?
Creamy Banana and Kiwi Parfaits
by the seat of my pants
1 large or 2 small very ripe bananas, chilled (put banana into the fridge in the morning...)
1/2 c honey yogurt
1 - 2 ripe kiwi fruit depending upon size
Peel and slice the kiwi(s). For presentation, set aside one slice, cut in half and set aside. Dice the remaining kiwi slices.
Mash the banana, fold in the honey yogurt.
Layer the banana mixture and the kiwi fruit pieces in an attractive glass serving dishes. Top with the reserved half slices. Chill until serving time.
