Earlier last year when I was given a gift card to a major department, I used it to have some fun and buy things that I wanted, instead of things I needed. And like I usually do I headed straight to the kitchen wares. A spiralizer went into my shopping cart.....
Fast forward a few months, a move to a new home, a change in jobs, and then some surgeries and I finally got around to playing with the spiralizer last night. This golden beet salad with avocado and feta cheese, dressed with a grapefruit dijon mint vinaigrette, is the result.
Not only did we enjoy this salad for dinner, I get to take the leftovers with me today for lunch. I hope you give it a try, it is refreshing and delicious.
