What it comes down to, in reality, is that I don't want to eat the same food as leftovers, day after day. Which was happening until I began to learn, and cook smaller amounts. It is still a focus and will continue to be because fresh food is my favorite kind to enjoy!
|Almond Butter Cookies|
These cookies are great, it makes one sheet of cookies, not several dozens, it is easy and they are delicious. I have shared this recipe if you will as peanut butter cookies, but the almond ones are my new favorite. My guess is, you could make these with any nut butter. I have in the past, in a frugal moment made these cookies with a sunflower seed butter, and they too were delicious.
Almond Butter Cookies
adapted from: recipes from the internet, that we all use
1 c almond butter
1 c sugar
Combine well, scoop out onto the baking sheet into 15 cookies.
Using a large fork, flatten gently in a criss-cross pattern. Bake 12-15 minutes or until done in your oven.
Note: the longer baking time will produce a crisp cookie, the shorter time a chewy cookie.
