Watermelon with Mint and Feta

Yesterday my dear husband got the mint settled into its new home in the side yard. This tub of mint has traveled with us to two homes. We (that would be my husband actually) just dig it up and take it with us. Mint is one of those garden items that you want to have some control over, so we plant it is a large heavy duty garden pot, and sink that planter pot into the ground. It has the comforts of being in the ground for temperature control and we get to control how far it spreads and takes over (it does not).

Soon after, the mint got settled I remembered this salad. You know the one with mint and feta to offer a salty contrast to the sweet fruit. I love flavor combinations like this one, it is always refreshing and actually very good for you as well.

But today we are having some with dinner.......

Watermelon with Feta and Mint

4 c watermelon chunks, you can dice or use a fork for irregular shapes
1/4 c mint leaves, minced
3/4 - 1 c crumbled feta cheese

Combine the watermelon and mint, by folding the mint into the melon. Spoon melon into a shallow serving bowl, scatter the feta over the top.

Refrigerate until serving.
