Overnight Chocolate Almond Oats and Date Chia Pudding, breakfast ideas to enjoy!

It has been an interesting couple of weeks here on the peninsula. We have been adopted by a pair of ducks, who come to feed (because of course, we put food out for them!) while the leg heals on the female. When this began she held her injured leg up tight under her wing, only able to hop and fly to get around. We did notice last night that she has brought the leg down and has begun to hobble with a considerable limp. But improve she has! For the record, she loves my homemade whole grain bread...

Relaxing after a meal of oats (of course!) flax seeds and homemade bread. 

With serving them a meal each day it became apparent that I must name them, so I did. She is Dehlila and by default he is Drake. He is always by her side watching out while she eats. Taking the cue from her regarding when it is time to move on or stay and rest. They often return in the evening to nibble on the leftovers and relax in the garden bed among the plants.

Easy to digest breakfast foods, overnight oats and date chia pudding. Serve with granola for a hearty breakfast.

I have also been searching for more digestible foods for myself, and have found much to my surprise that these two breakfast ideas are delicious and easy on my healing stomach. Each is made with my homemade almond milk and very conveniently the two ideas take exactly one recipe of almond milk. They also provide variety for breakfast, something I find very appealing.

Oh, and one more tip regarding your homemade almond flour, almond flour is perfect to replace a portion of the nuts called for when making homemade granola. Frugal and delicious.

Overnight Chocolate and Almond Oats. Serve chilled or warm.
Overnight Almond and Chocolate Oats

Overnight Chocolate Almond Butter Oats
inspired by countless recipes
serves 2-4

1 c almond milk
2-4 T almond butter (I use lots, love almonds!)
3 T maple syrup
1 T dry cocoa powder
1 c oats
1 T Chia seeds

Combine the almond milk, almond butter, maple syrup, and cocoa. Beat until smooth, stir in oats and chia seeds. Cover and refrigerate overnight.


Date and Chia Pudding. Serve with Granola for a hearty breakfast.

Date Chia Pudding
inspired by countless recipes
serves 2-4

1 c almond milk
6 whole dates, remove pits and cut into small pieces
1/3 c chia seeds

Place almond milk and dates into blender cup, let stand 30 minutes for dates to soften slightly. Puree until smooth (there may be small bits of date remain)

Pour into a bowl, stir in chia seeds. Cover and refrigerate overnight. Serve alongside granola if desired or enjoy plain.

PS, you could turn this into an Espresso Date Chia Pudding by adding 1 t espresso powder with the almond milk, this would be really delicious with any chocolate granola you might make or have around...
