I have been spending this last year getting ready to retire from working and then once no longer working, getting ready for the comfort of not working outside of the home. That will not come as a surprise to anyone who has already transitioned from work outside of the home and now only working from home...

This process also included being frugal. Frugal because it is respectful to the farmer that grew our food and because with our new income levels, frugal in the sense of saving money. Additionally, for us, food is expensive here. Bless the local stores, they actually have a wonderful variety and conduct weekly sales, but honestly, the selection of organic is small and try as they might, the local stores have the added burden of huge population changes throughout the year.

We shop weekly and plan our eating around what is best used now. We always start with the fruit and veggie tower that has a permanent spot in the kitchen. But I have learned the most abundant ingredient; if you will, in my kitchen is free. We all have it our lives and much like a muscle, it becomes stronger with use. What is that ingredient, you might ask? It is Creativity.

This morning's breakfast is proof. We could have had the usual pancakes with maple syrup. Or we could have had a bowl of granola with milk or yogurt, or even apple sauce and toast with a side of fried eggs. But instead, we had...

 Whole Grain Baked Pancakes with Warm Apple Sauce, Yogurt, and Granola
by the seat of my pants!
350-degree oven

1 recipe oven baked pancakes, you will find the recipe here. 

For the Apple Sauce:
3/4 c unsweetened applesauce
1/4 c brown sugar
1/4 t cinnamon

1/4-1/2 c vanilla yogurt

1/4-1/2 c your favorite granola or you might like this one!

While the pancake is baking make the Apple Sauce. In a small pan combine applesauce, brown sugar and cinnamon, bring to a simmer, stir until sugar has dissolved. Set aside to cool slightly.

To serve, cut pancake into 8 squares, place pancake pieces on the serving plate. Add a swirl of yogurt, a spoonful (or 2!) Apple Sauce and garnish with the granola.
