Salads can be eaten year round now, as salad greens and other greens that work well in salads are easy greenhouse crops. A couple of our favorites are Romaine and Tucson Kale. This year I decided to try a flower box of Swiss Chard through the winter on the deck, so far, so good! We have had a few frosty mornings, but the chard is doing fine. Lucky us, as everyone benefits from something raw at least once a day, or as part of your dinner if the day got away from you...

This collection is easy and delicious, plus there are no ingredients that did not come from your own pantry. We think you will find one or two (at the very least!) that you will enjoy. It definitely makes it easy to offer a salad or even just simple sliced vegetables when you have something delicious and homemade to top them with.

Maple Balsamic Vinaigrette
Maple Balsamic Vinaigrette. Super easy and super delicious. Good on just about anything!

Smoked Paprika Vinaigrette
Smoked Paprika Vinaigrette. A tad bit of work, but the results are so worth it! This is also perfect on sliced tomatoes.

Roasted Lemon and Basil Vinaigrette
Roasted Lemon and Basil Vinaigrette. Roast up a cut lemon next time you have an open fire on the grill, you won't regret it. We like to roast up a few lemons and put them in the freezer, to enjoy this one in the winter.

Julia's Caesar
Julia's Caesar.  A stand-by we enjoy often. This is hearty enough to stand up to a kale salad. Add some sliced chicken or salmon and turn it into a main dish meal.

Tangy Cranberry with Thyme Vinaigrette
Tangy Cranberry with Thyme Vinaigrette. Unusual and unusually delicious. Plus with dried cranberries in the pantry, this can be made at a moments notice. This is wonderful on a mixture of baby spinach leaves (also available year round) and romaine.

Creamy Paprika
Creamy Paprika. This one is never a bad idea! This one is perfect for folks that like to dunk their vegetables in a dip.

Ginger Carrot Dressing

Ginger Carrot Dressing. Traditionally served over an iceberg wedge. But we usually don't follow tradition.... we enjoyed this on romaine with diced cucumber and slivers of sweet red pepper.
