Easy Penuche Fudge, a delicious brown sugar fudge

I have always been a bit timid (actually a big scardy cat) about making candy. Of course, I have made instant fudge with sweetened milk, chocolate chip and a couple of other ingredients. And while it is delicious, but let's be honest, that is more melting, than making.

I would like to make candy, as my grandmother did during earlier times, and this recipe helped me find a bit of that kind of cooking. It does not take a candy thermometer (which is good, as I do not have one!), just a few minutes of stirring once the mixture has been brought to a boil. From there a bit of wait time, and some good old-fashioned beating with a wooden spoon. 

Making this the perfect candy to whip up at a moments notice, and then enjoy and share with friends. I hope you give it a try, it is creamy, rich and brown sugar delicious. And while we all love chocolate, this is a wonderful addition to any dessert offering, without it being chocolate.

1 c butter (I used our regular salted, I think the little bit of salt is delicious in everything!)
2 c brown sugar (standard packed measurement style)

1/2 c whole milk

1 t vanilla
3 1/2-4 c sifted powder sugar
1 1/2 c chopped nuts, pecans or walnuts, we used walnuts

Melt butter, add brown sugar. Bring to a boil over medium heat, boil 2 minutes stirring constantly, reduce heat as needed.

Remove from heat, add milk. Stir well, taking care the milk may boil up. Return to heat, bring contents to a boil once again, stirring constantly. Set aside to cool to a gentle warmth to the touch. Add vanilla, stir well.

Prepare a 9X5 inch loaf pan, butter the sides and bottom, then line with parchment. Set aside.

Add powdered sugar 1/2 cup at a time, beating well after each addition.

The mixture will be thick, however, do not use more than the listed amount of powdered sugar, fudge will firm up as it sets. Immediately stir in the nuts, and turn into the prepared loaf pan.

When set, cut in slices crosswise, then squares. Perfect for sharing with family and friends!

The little taste from the side of the pan told me all I needed to know, this is delicious! Cut into small squares to serve.
