Cottage Apple Salad

This borders on silly as far as an actual recipe is concerned. But on the other hand, it is too tasty to leave it a secret and not share. The creamy cottage cheese gently coats the crisp sweet apple pieces, while cinnamon is the perfect spice, it is zesty without being overpowering in flavor.

If someone had told me that a scoop of cottage cheese, a diced apple and a dusting of cinnamon would taste this good I would have called them on the accuracy of their taste buds!

Seriously, without apologies, I have to say, it really is good. PS, we loved the pecans on top!

Cottage Apple Salad, simple ingredients come together for a delicious fruit salad.
Cottage Apple Salad

Cottage Apple Salad
by the seat of my pants
serves 2 - 3

1 large red apple, diced (no need to peel)
1 scoop, about 1/3 c cottage cheese
ground cinnamon
pecans or walnut, if desired

Combine the diced apple, cottage cheese and a dash of cinnamon, stir well to combine.

Cottage Apple Salad, easy apple and cottage salad.

Place in a serving dish, dust the top with additional cinnamon and a few broken pecans or walnuts, if desired.
