How to make Tomato Serendipity, a tomato and cheese seasoning!

You can't go wrong with a few ready to go already prepared condiments in your pantry. This recipe for Tomato Serendipity is just what you are looking for! As convenient as the green can of cheese, but with so much more flavor. 

We love cooking dinner for the family! There doesn't even have to be anything special to celebrate. And actually, in these busy times, just being able to get together, is special enough! So we did, we prepared a lovely meal, and everyone including the two of us had a great time. 


Tomato Serendipity, a zesty dried tomato and cheese seasoning blend

One dish, in particular, that was a surprise hit was, Italian Potatoes, and Beans. It really is delicious! I must confess, I am a condiment woman. I love them! Without any overkill, if a condiment can enhance with just a sprinkle of this or a splash of that, well what is not to like? 

Then suddenly I got this idea for a very simple two-ingredient topping. Is it good? Yes! Which we now call Tomato Serendipity, and since sharing is what we do around here, let's make some, shall we?


How to make, Simple and delicious two ingredient, Tomato serendipity!


Tomato Serendipity
by the seat of my pants!
updated 02/2020
makes about 2 cups

1 c lightly packed dried (not packed in oil) tomato pieces (Hint: use the julienne cut style for this recipe)
3/4 c dried Parmesan cheese or a Parmesan/Romano blend (yes the kind in the green can.....)

Simply buzz in your processor until all pieces are approximately the size of the cheese.

For guests put in a serving dish, add a sprinkling spoon! For all other times, and there will be many, use a shaker jar! Ironically that is the lid from the last cheese container...

Cooks notes and possible words of wisdom:  This blend is delicious! You can use this stuff just about anywhere tomato and/or Parmesan cheese are invited, Sprinkled over soups, pasta, vegetables both hot and cold (including salad yes!). Scrambled eggs, and don't forget to season those sandwiches.....
