We have been busy getting the last chores done in time to go camping next week, for a little vacation. And the first time we will take Erma  (our little vintage trailer) out on a date!

Targeted chores call for quick (but still frugal) meals. I have been making it a habit to keep leftover meat with sauce or gravy neatly tucked in the freezer for a quick meal.

It would be easy to just whip up some mashed potatoes or biscuits and make a pot pie, but not every time as that would be boring. This is just as easy and gives a nice variety. I have already touched on this process with my Green Chili Burritos, but this will work with just about any leftover cooked meat.

350-degree oven

2-3 c leftover meat with gravy ( I had some leftover pork chops and cooking liquid)
1 t favorite tex-mex seasoning or taco seasoning
1 1/2-2 c beans, drained (canned or home-cooked)
1 c salsa, canned or homemade
6-8 whole-grain tortillas
1-1 1/2 c grated cheese

additional salsa and sour cream for serving

Heat the meat and gravy along with the seasoning, drained beans, and salsa.

Use a slotted spoon to evenly divide the meat mixture between the tortillas.

Roll up and place in a 9X13 baking pan.

Spoon the gravy/salsa mixture over the rolled tortillas.

Sprinkle with the cheese.

Bake 30 minutes.
