Carrot Ginger Salad Dressing

We are about to use up the last of the store-bought dressing. Which is a celebration really to our homemade life. We are a bit out of the way to just "drop by the store" and make a quick "grab and go" of a few things. Which I love, by the way.  We moved here on purpose, for the quiet, for nature and for the good life we had in mind. Which includes healthy food, to fuel our selves and our creativity.

Carrot Ginger Dressing

This dressing while made famous and served over iceberg, will be drizzled over romaine lettuce with diced cucumber and slivers of sweet red pepper. Simple, beautiful and delicious. We loved it, it is so good.......

Carrot Ginger Salad Dressing

Ginger Carrot Dressing
adapted from: Saveur
makes about 1 1/2 cups

3/4 c oil
1/2 c rice wine vinegar
1/4 c soy sauce
2 T sugar
1 1/2 - 2 t finely grated fresh ginger (use the full 2 teaspoons, yum!)
2 carrots, peeled and chopped
1 - 1/2 inch slice of onion, if you really like onion use the entire 1/2 yellow onion as suggested in the recipe. If however, you want a hint of onion use a single slice, chopped.
pepper to taste

Combine in a food processor or blender, blend until smooth. Spoon over salad greens of choice.

  4. I had a salad at a Thai restaurant a few weeks ago, and it was delicious. I think the dressing must have been similar to this, so I'm definitely going to try this recipe!

  5. You just can't beat a good homemade dressing. It's easy to make and so much better than bottled dressing.

  6. When you realize how easy it is to make a variety of salad dressings, it becomes a mystery why people pay so much for that artificially-thickened glop on the supermarket shelves. Your dressing sounds great ... I love the little salad with a similar ginger dressing that often comes with miso soup in sushi restaurants.
