Simple Parsley Salad, delicious things come in plain packages!

Welcome to Our Sunday Café, we are pleased you stopped by for a visit. Today we are offering another delicious recipe from our kitchen. We hope you enjoy it as much as we did…

I have been a parsley fan for decades (yeah, I really am that old!). It is so ignored there on the side of your plate when dining out, and it was actually put there for a very good reason. Yes, it is pretty and fresh looking, but alas that is not the reason. No, beauty had nothing to do with it, real intentions were to freshen your breath, at the end of the meal.

But honestly, in my case, it is the first thing I eat for the delicious and herb-y flavor! If I am lucky, there are two sprigs on my plate and I have one for after dinner as well. We enjoy it well enough for it to be the ingredient in a recipe or on our salad plates. This Simple Parsley Salad is a good example of a salad enjoyed just last night. But you can find many parsley recipes in the archives, such as this Cucumber Parsley Salad, or this Parsley Honey and Lemon Salad Dressing, and Parsley Pesto with Garlic and Walnuts.  It is also delicious in baked goods, minced it can be added to biscuits or savory muffins for a delicious flavor. 

It turns out that parsley is a powerhouse of nutrition, actually, and we eat it often. This salad will be a regular on our table because it is quick, delicious and can be changed out with different cheese to go with whatever else might be on your table that meal. I hope you give it a try...

Simple Parsley Salad

Simple Parsley Salad
by the seat of my pants
serves 2

1 bunch of Italian Flat Leaf Parsley
red wine vinegar - about 1 T
olive oil - about 1 T
2 tomatoes
Feta Cheese - or another cheese of your choice

Wash, dry and chop the parsley. In a medium bowl, combine chopped parsley, vinegar, and oil. Toss and gently massage the parsley with the back of a wooden spoon to soften the leaves lightly. Salt to taste.

Slice the tomatoes and arrange on two plates, top the parsley salad, crumbled Feta and then pepper.
