Warm Broccoli Brown Rice and Feta Salad

Cooking for two is a challenge, and cooking for two in a small kitchen is a bit more of a challenge! Since hitting the road a year ago to travel and see what we could see, I have been tweaking our recipes for size, flavor, and convenience. While continuing to eat whole foods, cooked at home, and eaten together.

One convenience I have come to employ is cooked ahead foods, like brown rice. One cup dry cooks up to 3 cups of ready to use rice, and fortunately, it does not take up too much room in our little RV fridge! I have been working on small-batch recipes that use one cup of cooked rice, to take full advantage of my new favorite convenience food, cooked and ready brown rice.

I love broccoli, always have. It is assertive, nutritious and versatile.  I have enjoyed it raw in salads, but never warm...but this combination of broccoli, brown rice and feta is a winner. Plus this combination is perfect to serve alongside grilled meat for a simple meal or as a meatless meal, should you prefer. The choice is yours. But whatever you do, don't forget to drizzle on a touch of the vinaigrette.

Warm Broccoli and Brown Rice Salad with Feta
by the seat of my pants

2 c frozen broccoli, large chunks or spears are best (about 9 oz frozen.)
1 c cooked brown rice
1/4 c Feta cheese
1 small tomato, cut into 8 wedges
black olives if desired (not shown in this photo, but so delicious!)
2 T Everyday Vinaigrette, see below

Place broccoli into a small glass bowl, microwave 2 1/2 - 3 minutes or until thawed completely and hot, drain well.

Combine brown rice and feta cheese in a small glass bowl, microwave until hot, toss gently with the drained broccoli, arrange on a serving plate, top with tomato wedges, drizzle with Everyday Vinaigrette and garnish with olives if desired.

Everyday Vinaigrette
adapted from: Best Lunchbox ever!

1 t sugar
1 t Dijon mustard
1 t soy sauce - don't leave this out!
1 T red wine vinegar
1 T balsamic vinegar
5 T oil, we prefer avocado oil

Combine all ingredients in a small jar or container with a tight-fitting lid, shake well to combine, drizzle over salad as desired.
Makes approximately 1/2 cup dressing. Use any remaining vinaigrette for tossed greens, or more Broccoli Brown Rice Salad!
