As I continue to explore vintage recipes and some of the old ways that were common many years ago, one thing has become very clear. Foods were grown at home, cooked at home and eaten at home. All three of which are still of great value. 

But in addition to this, I have also observed that most of the recipes that were family favorites handed down and looked forward to being enjoyed often, were usually simply prepared. It only makes sense as it does take a lot of time to grow, care for and preserve food from the garden and family orchard. 

Due to time constraints, those simple preparation methods came to be, meals were served, enjoyed and all were nourished. Today many of us do not grow our own food, but time still tends to be in short supply. Which is one reason I have begun to go back and relearn some cooking lessons, from the old ways

Most simply prepared foods were the result of matching flavors, but more importantly using quality ingredients. If you have a bright flavored vinegar, a fresh beet, and salty creamy Feta, together those elements will make a fine impromptu salad. And of course, the opposite is also true, if you have poor quality ingredients, you will have a lackluster dish that no one wants to eat...

Easy to prepare, Simple 3 Ingredient Beet Salad, vibrant and delicious!
3 Ingredient Beet Salad. 

(Simple) 3 Ingredient Beet Salad
by the seat of my pants!

1 large beet, cooked peeled and diced (about 1 cup)
2 T Balsamic vinegar - or any light naturally sweet vinegar
3 to 4 T crumbled Feta

Place the diced beets into a small bowl, drizzle with Balsamic vinegar, toss lightly, and sprinkle with the Feta cheese.
