3 Vegetable Mash with Sauteed Green Onions, a delicious mashed potatoes dish!

Recently I have begun to add a little extra to my mashed potatoes, and as it turns out, this makes them extra delicious! This latest rendition calls for potatoes, carrots, sauteed green onions all mashed up with a touch of cream cheese and some garlic...This dish of potatoes is quite delicious on their own, but it needs to be said that a touch of pork, chicken or turkey gravy will also be quite a good choice. 

The ingredients are easily attainable if not already in your pantry. The availability of ingredients for a recipe is important, not everyone can drop everything to dash to the store. This came home to roost when we were National Park Volunteers for our year of travel, and there were times, that there was no store to dash off too...You might find that this dish becomes a family favorite and you will be making it again and again...

3 Veg Mash with Sauteed Green Onions
by the seat of my pants!

3 medium potatoes, about one pound
3 medium carrots
1/2 t salt 
1 bunch green onions
1-2 T butter
1/2 t garlic salt
3 oz cream cheese, diced into squares
1/3-1/2 c milk - start with 1/3 c milk adding more as needed.
fresh ground pepper

Peel (if desired) carrots and potatoes. Slice carrots thinly and place in the bottom of a medium-sized saucepan. Quarter the potatoes lengthwise, placing on top of the carrots. Sprinkle with the 1/2 t salt.

Cover with cold water, cover with a lid and bring to a boil. Reduce heat to medium and cook until carrots and potatoes are tender. Drain well. 

Return the pan to the stove, add the milk allowing the milk to get hot. Remove pan from the burner, add the cream cheese cubes, cover with the lid, set aside. While the cream cheese is melting, saute the green onions.

Clean and slice the green onions thinly, saute the onions in the butter in a small skillet, stirring constantly until some of the pieces are beginning to brown. Add to the potatoes in the pan along with the garlic salt and freshly ground pepper. Mash the vegetables together adding more milk to achieve the consistency you prefer. Pile into a serving bowl, and serve.
