to sharing a great recipe for you to enjoy every day during these very busy days
of December……this season, eat well, be happy and celebrate with those you love!
Ambrosia was the holiday fruit salad of choice many years ago. Fresh citrus layered with shredded coconut and sliced bananas was looked forward to with glee. And to this day, there is nothing better than fresh flavorful citrus layered with tender coconut shreds, a few banana slices and if you like, pineapple chunks.
And that is still my favorite way to present Ambrosia, the juiciest of fruit, swaddled in coconut. I prefer not to add whipped cream or marshmallows. Because the fresh, delicious flavor of the fruit is such a treat in these days of heavier food for our holiday celebrations.
It would also be very fair to say that the Ambrosia you serve your family should reflect your taste desires. With that said, I offer you "mix and match" Ambrosia, to please your family. You will want to make this early in the day and let the Ambrosia chill in the refrigerator until serving time.
Do It Yourself, Ambrosia
this one will be,
by the seat of your pants!
a mix of 6 oranges and tangerines
shredded lightly sweetened coconut
16 oz pineapple chunks, juice packed
2 bananas
Peel and slice the citrus fruits, layer in a clear serving bowl with coconut, bananas, and pineapple as desired. You may use all these choices, or limit your Ambrosia to just the citrus and coconut. No matter how you make it, this will be a delicious, and fresh-tasting bowl of goodness to offer family and friends.
