I have made many homemade mixes through the years, with my original mixes coming from the famous Make A Mix Cookbook. I had several mixes from that book in my pantry and they served me well helping to get a meal on the table in short order. But there was one drawback, the mixes were made in large quantities requiring large canisters for storage. In time, I didn't have the space for the canisters and little by little my homemade mixes went by the wayside...

This is a different approach, each reusable bag holds only one portion of the mix, you may certainly make up several, or even just one to have on hand. I fell in like with this recipe because I can put several mixes together all at once, only having to get out the ingredients that one time. Once I empty the contents into a bowl to mix the recipe, I place the bag in the freezer, the perfect cold storage locker, until it is time to make up a few more bags.

This mix also does not contain shortening or any other ingredient needing refrigeration. They are shelf-stable and ready when you are. Plus they are small batches, perfect for smaller sized families, or to bake up for an afternoon snack for larger families! You can bet, I will be working on more flavors of cookies to share....

Gingersnap Cookies, from your own homemade mix!

Gingersnap Cookie Mix
adapted from fake it frugal

1 1/2 c whole wheat flour, you may certainly use all-purpose if desired
3/4 c brown sugar
3/4 t baking soda
1 1/2 t ginger
1 1/2 t cinnamon
1/4 t ground nutmeg
1/8 t ground cloves

1-quart size freezer storage bag with the following notes written on the outside:
Combine dry contents with, 1 egg, 1/4 c oil, 2 T molasses, 1 t water. Bake 350 for 12-14 minutes.

Place the dry ingredients into the quart bag. Seal and store in your pantry until you want to bake cookies. 

Baking the Gingersnap Cookie Mix
350-degree oven

Cookie mix
1 egg
1/4 c oil
2 T molasses
1 t water - measure carefully or your cookies might be too wet.
granulated sugar for pressing

Place the mix contents into a medium-sized mixing bowl, stir well to combine. Make a "well" in the center of the dry ingredients, drop in the egg, oil, molasses, and water, use a fork to beat the egg into the other wet ingredients. Using a large spoon beat the wet and dry ingredients together until completely mixed. 

For chewy cookies:
Divide into 12 portions, roll into a ball. Place 2 inches apart on the baking sheet, sprinkle lightly with sugar, and press flat with the bottom of a glass. Bake 12-13 minutes. Let cool on the baking sheet for 3-5 minutes, remove to cooling racks to finish cooling. 

For crispy cookies:
Mix dough as instructed above, roll into 24 smaller balls, flatten and bake for 9 to 11 minutes. Let cool on the baking sheet for 3-5 minutes, remove to cooling racks to finish cooling.
