Sweet Lime and Curry Mustard

This one is for the curry lovers out there! Curry is one of those flavors that you either love or you don't. We came to enjoy curry rather late and even now I prefer a sweeter curry, a lighter flavored curry. This mustard is perfect to offer a bit of curry flavor to your sandwich, in a salad dressing,  and it would make great mustard sauced chicken. 

It is quite easy because it starts with prepared mustard, a bit of honey, some lime and a spoonful of sugar...

Sweet Lime and Curry Mustard

by the seat of my pants!

12 oz jar of prepared mustard, we used a spicy brown mustard
1 lime
2 T honey
1 T sugar
2 t curry powder

Zest the lime, then juice it. Combine all ingredients, blending well. Pour into a jar with a lid, and refrigerate for storage. Like most mustard, this one will need a couple of weeks to mellow.
