Part of my quest to make the best food we can eat is coupled with making the right amount for our little family. As I have offered before, learning to cook less, has been much more difficult than I would ever have imagined.....
What it comes down to, in reality, is that I don't want to eat the same food as leftovers, day after day. Which was happening until I began to learn new recipes, and cook smaller amounts. It is still a focus and will continue to be because fresh food is my favorite kind to enjoy!
|Almond Butter Cookies|
These cookies are great, it makes one sheet of cookies, not several dozen. They are easy to make and they are delicious. I have shared this recipe if you will as peanut butter cookies, but the almond butter version is my new favorite. My guess is, you could make these with any nut butter. I have in the past, in a frugal moment made these cookies with a sunflower seed butter, and they too were delicious.
Almond Butter Cookies
adapted from: recipes from the internet, that we all use
1 c almond butter
1 c sugar
Combine well, scoop out onto a baking sheet into 15 cookies.
Using a large fork, flatten gently in a criss-cross pattern. Bake 12-15 minutes or until done in your oven.
Note: the longer baking time will produce a crisp cookie, the shorter time a chewy cookie.
