How to make Brown Sugar, for your homemade household

I just finished a ten-day stretch at work, and now I have a four day weekend in compensation. For ten days I have missed cooking, but I am so very thankful for a sweet husband who kept me fed as the days ticked by. The one task I wanted to complete in the kitchen (before starting to cook!) was a wee bit of organization.

I love our home on the peninsula, but the kitchen, while it is attractive, does not offer the storage and organization that our previous home did. So there was only one thing to do, get busy, more creative, and get it better organized, so I did.

For our breakfast, we had oatmeal with toasted oats (toast your oats before you cook them, the time spent is worth it.....) with raisins, dates, coconut butter and brown sugar. Today's breakfast used up the rest of the commercial brown sugar that came with us to the peninsula when we moved.

Homemade Brown Sugar and Dark Brown Sugar

We don't use a lot of sugar normally, yet my goal was to make brown sugar from the organic evaporated cane sugar in our sugar cannister. Our tastes have changed in the last few years and sweets are not the first thought when planning a meal.

Brown sugar is very simple to make. You can also customize it for your family's preferences. I do like to have a light brown sugar as well as a dark brown sugar on hand for cooking and baking. Below are the formulas I used. Feel free to adjust for your own taste and preference. Since I only have one sugar bear, the dark brown sugar is stored in a mason jar with a screw on cap.

Homemade Household Brown Sugar

Note: if you have a texture preference, evaporated cane sugar is a larger size than standard sugar. If you like the smaller size (especially over your oatmeal, like we do) you may want to buzz the sugar in a food processor for a few moments before adding the molasses.

Light Brown Sugar
Makes 6 cups

6 c evaporated cane sugar
1/3 c molasses

Drizzle the molasses over the top of the sugar in a large bowl. Using a whisk, stir and fold the sugar over and over until the molasses has been distributed evenly. Store sugar in a canister with a tight-fitting lid, or if you have a terra cotta sugar bear, place a drop of water on the bear, spread the water around over the top and gently place it on the sugar. Cover and store. Use in all recipes calling for brown sugar.


Dark Brown Sugar
Makes 4 cups

4 c evaporated cane sugar
1/3 c molasses

Drizzle the molasses over the top of the sugar in a large bowl. Using a whisk, stir and fold the sugar over and over until the molasses had been distributed evenly. Store sugar in a canister with a tight-fitting lid, or if you have a terra cotta sugar bear, place a drop of water on the bear, spread the water around over the top and gently place it on the sugar. Cover and store. Use in all recipes calling for brown sugar.
