Roasted Brussels Sprouts with Apples and Pecans.

Vegetables are one of the easiest ways to change up your meals. Having another meatloaf or pork chop dish does not seem repetitive when paired with different vegetables or even our favorite vegetables prepared in different ways. Oven roasting is a perfect way to achieve a "new" vegetable dish to serve with your meal. This combination is pleasing and simple to throw together from a well-stocked pantry. 

Brussels Sprouts have good keeping qualities and will be found at the market during this late fall season, I hope you give this dish a try, it really is delicious and goes well with many of your favorite main dishes that show up on the table as family favorites!

Roasted Brussels Sprouts with Apples and Pecans

Roasted Brussels Sprouts with Apples and Pecans
by the seat of my pants!
400-degree oven OR use your AirFryer!

1 pound Brussels Sprouts
2 medium-sized apples, peeled if desired
1/2 c whole pecans
2 T oil
salt and pepper to taste

Prepare Brussels Sprouts by peeling off outer leaves, trimming stem end and cutting in half. Peel apples if desired, core, cut into quarters, then large chunks.

Place sprouts, apple chunks, and pecans in a medium bowl toss with the oil.

Spread on to a large rimmed pan ( you will want a large enough pan so that each piece is not touching), season with salt and pepper. 

Bake 12 minutes, toss to turn over for browning on all sides, continue baking additional 10 to 12 minutes or until done to your liking.

  2. I bought Brussels sprouts today. I've added pecans before but never thought to add apple -- what a great idea. This dish says fall!
